Snowed In
If you're snowed in
and you like to bake,
you're going to love this simple, delicious treat.
It's My Version of "Oat, Pear and Raspberry Loaf"
Adapted from Bill's Open Kitchen
Makes 1- 8+1/2 x 4+1/2 Loaf
Preheat oven to 350 degrees.
Prepare a loaf pan w/butter;
line it with parchment paper.(if you have it)
Crunchy Granola Topping:
1/4 C rolled oats
1/4 C brown sugar
2 TB all-purpose flour
2 TB chilled butter, cut into small pieces.
Oat, Pear, and Raspberry Loaf:1 C rolled oats
1 C boiling water
11 TB unsalted butter
1/2 C brown sugar
1/4 C granulated sugar
2 eggs, room temp.
1 Tsp. vanilla extract
Zest of one tangerine (I used an orange)
1+1/2 C all-purpose flour
Pinch of salt
1 Tsp. baking powder
Few heavy shakes of cinnamon
1 Pear, peeled, cored, sliced
3/4 C raspberries (I used cranberries)
Mix topping ingredients in a small bowl. Rub with fingers until it makes little balls. Set aside while you prepare the loaf.
To make loaf, pour boiling water over rolled oats. Let it sit.
Cream butter and sugars until light and creamy.
Add eggs, one at a time. Mix in vanilla and zest.
Sift flour, salt, baking powder and cinnamon over the creamed butter.
Add the oats and half of the pear and mix until well combined.
Spread 2/3 of the batter into your loaf pan. Spread with off set spatula.
Sprinkle with the remaining pear and raspberries (or cranberries).
Smooth the remaining batter on top.
Gently sprinkle the Granola Topping over the loaf.
Place your loaf pan on a rimmed baking pan in case of leaks.
The batter with fill the pan but it's OK!
Bake 1 hour, 10 min.; or until toothpick comes out clean.
Keep in mind that the fruits remain moist.
Cool in pan 10 minutes.
